    Can you even imagine being tired of classic lasagna? It’s pretty hard for me, but maybe some of you want something different. Or you like Middle Eastern flavours like cumin, cinnamon, tahini and mint, but you don’t feel like cooking an entirely new dish. Maybe your family is picky and they will only eat food that is at least similar in form to something well known. Who am I kidding, the recipe is just perfect for everybody. Instagram post 2161085597523880401_8937798665 How recipe development looks like: before coming up with the millet falafel (link in bio!), I was on a low fodmap diet and experimented with falafel that would be appropriate for the diet. Chickpeas are allowed in very limited amount, so I substituted half with potatoes. The taste was good, but a bit bland - onion and garlic are not low fodmap, and the texture was not like a falafel at all. Next step was just waiting out the diet period (the longest 4 weeks in my life) so I could add onions and garlic to the recipe, and going through other potential base products. Millet turned out to be the perfect compromise between taste, crunchiness potential after frying and ability to hold the falafels together. Unfortunately- the recipe is no longer low fodmap (I found this diet extremely hard to work with, especially while avoiding meat).Then it only took preparing the falafels, keeping half of them to see how they reheat and taking the pictures. They can be a great source of fat and protein, which keeps you satiated for longer. Adding nuts to salads for lunch is one of my favourite tricks to make them more interesting, creating pleasant texture and delivering an overall satisfying meal. This brings me to this pretty summer salad I made a while ago. Brown rice, pomegranate, walnuts, mint and lemon pepper dressing. It’s so easy that no recipe is needed. Just trust your common sense and taste, start with cooking and cooling the rice and add ingredients little by little. Instagram post 2064087546327096101_8937798665 Many meat replacements are not super thrilling to eat on their own (tbh often meat too), but they can be an ingredient in a satisfying and delicious meal. They shouldn’t be a base of a diet, and rather a pleasant addition of savoury taste and this specific texture and bite. I like them also as a convenient way of sneaking more protein into the dish, when providing the proper nutritional value with beans and nuts wouldn’t produce a balanced dish. Here I used fake chicken, green beans and eggs to provide enough protein per serving while reducing the amount of animal products significantly. I’m pretty mad at myself for not writing down the recipe for this casserole immediately. By now I of course forgot the exact proportions.
