Apple cinnamon banana bread (that is good enough for guilt free breakfast)

Disclaimer: this is not a fluffy type of banana bread. The consistency is more of a dense brownie than anything else. I think even that the name “banana bread” here is a bit deceiving, as usually the banana breads I’ve seen on the internet are basically regular cakes with a bit of banana in the mix. Anyway, it looks not so great inside but it’s still delicious.  

This recipe is so simple, that I don’t even know what to write about it. Mash bananas, dump the rest of the ingredients into the same bowl and this is all the effort needed – it can take maybe 10 minutes, including cleaning any spilt oil or washing the bowl and glass after. It cannot get faster than this.  

It’s also nice that eating this banana bread for breakfast is quite easy to justify: only one tablespoon of added sugar, oats, fruit, reasonable amount of fat. Of course I’m not saying that eating cake for the first meal in a day, everyday, is good idea, it’s still cake. But again, what’s the point of being an adult if I cannot eat cake for breakfast sometimes. 

Apple cinnamon banana bread

3 very ripe bananas
1 large apple 
1/3 glass neutral oil
1/2 glass rolled oats
1 glass wheat flour
15g vanilla sugar, or 1 tablespoon vanilla extract
2 tsp cinnamon
1/2 tsp nutmeg
2 tsp baking powder

Preheat the oven to 180 degrees. Mash bananas (or blend them), cut the apples in small cubes (about 1-2cm), mix everything together. Pour into baking into greased and dusted with flour baking pan, bake for 30-40 minutes (check with toothpick)
